What I cooked in that competition

When I was ten I made oven pizza and blister-burned all five fingertips on my right hand in the process.

Around age 12 I perfected scrambled eggs in the microwave.

Then there are the teenage years where I began my exploration of vegetarian cooking. I perfected pb&j, salads, egg and cheese sandwiches and KRAFT Mac & Cheese.

In my late teens I realised I could heat tortilla gently on the skillet instead of nuking it in the microwave. I began eating quesadillas on the regular; often they were filled with leftover takeaway curry mixed with scrambled egg.

At 20 I learned how to make lava cake. In the microwave, of course.

During the summer I made falafel in attempts to impress a boy. (It was our last meal together, so I doubt that worked out!)

Recently I tried to make a baked potato. Not only did I burn the potato but I also burned my finger.

This is probably where I should say my mom hates cooking and she simply doesn’t do it unless she has to. Which means I’ve taught myself to cook along the way.

And then, for a reason unknown to me, someone thought it would be a good idea to invite me to a cooking competition in a proper kitchen while drinking margaritas. My first thought? What is this really big knife used for? Which was followed by: This should be a drinking competition!

Anyhow, I walked out with a goodie bag of Mexican Discovery food and recipes. Being low on funds like I am and very accepting of free food, I decided to try everything in the bag. Starting with a cold tortilla. (I was hungry and had some sliced cheese I could wrap inside- yes, my meals are often this simple as I’m determined to simply not be hungry while I have such a limited budget.)

There will be no recipes because I didn’t actually follow any and typically guess on cooking times. Please use your imagination on when to add what and how much because that’s what I did. Enjoy!
